Breads

AppleJack

Our Fall classic available when we have been to the orchard to collect the apples and fresh-squeezed the cider. Warm cinnamon in the dough combined with the natural sweetness of the cider make the perfect fall morning treat. Naturally-leavened and fermented.

Ingredients: Unbleached wheat flour, whole wheat flour, sourdough starter (flour, water, & live culture), well water, fresh-pressed apple cider, apples, salt, and cinnamon.



Blue Peppercorn

A Stick and Stone original made from Blue Hopi Corn, wheat flour, and cracked black pepper corns.  Spicy and delicious! Naturally-leavened and fermented.

Ingredients: Unbleached wheat flour, well water, blue Hopi cornmeal, sourdough starter (flour, water, & live culture), whole wheat flour, and salt.


Bohemain Rye

Also know as Deli Rye, this is your traditional rye sandwich bread made with a moderate amount of rye flour for a good rye flavor and a small amount of caraway seeds.  Boule shaped.  Naturally-leavened and fermented.

Ingredients: Unbleached wheat flour, well water, whole rye flour, sourdough starter (flour, water, & live culture), salt, and caraway seed.

This bread is deliciously light, fluffy, and perfect for everything from your fanciest dinner parties to the best french toast you've ever enjoyed. It's a celebration all by itself.

Caraway Rye

Proof that spring will return to us - and soon! Check out this favorite among rye enthusiasts for a St. Paddy's day preview! A Reuben is just the thing to chase away this winter chill.

Cheddar Jalape├▒

All of the goodness of our Pain au Levain with the added delight of chunks of sharp cheddar cheese and a zip of tangy jalape├▒os! For the milder of taste, we assure you that after it's baked, it's all flavor and not much heat. Grilled cheese sandwiches just got exciting! Naturally-leavened and fermented.

Ingredients: Unbleached wheat flour, well water, sourdough starter (flour, water, & live culture), extra sharp cheddar cheese, pickled jalapenos, and salt.

 
Cinnamon Raisin


Plump, flavorful raisins pair beautifully with the warmth of Vietnamese cinnamon. It's a market favorite among our customers.   No added sugar.  Naturally-leavened and fermented.

Ingredients: Unbleached wheat flour, well water, sourdough starter (flour, water, & live culture), raisins, whole wheat flour, salt, and cinnamon.

Country Rye


Our breads have no artificial flavors or preservatives - all you get is the naturally good flavor of the grain itself. This bread is only about 30% rye flour and topped with a blend of sesame, flax and caraway seeds making it perfect for those who don't like the overwhelming flavor of commercial American ryes.  Naturally-leavened and fermented.

Ingredients: High gluten wheat flour, well water, whole rye flour, sourdough starter (flour, water, & live culture), salt, caraway seed, sesame seed, and flax seed.



Dutch Sunflower

This bread comes to us courtesy of the Paulissen Bakery in the Netherlands.  Light and fluffy, it is loaded with crunchy flax, sesame, and sunflower seeds.  Great for deli sandwiches or your morning toast with jam.

Ingredients: Unbleached wheat flour, well water, sunflower seeds, flax seeds, sesame seeds, salt, vital wheat gluten, and yeast.

 
French Baguette

Every bit as good as the classic baguette carried and eaten around the streets of Paris. Crisp exterior and chewy inside with a hint of sweetness. Warm it in the oven at 425 directly on the rack for 5-7 minutes for that "fresh from the oven" experience. Perfect all by itself, with butter, and/or dipping in your favorite soup.

Ingredients: Bleached all-purpose wheat flour, unbleached wheat flour, well water, sourdough starter (flour, water, & live culture), salt, and yeast.



German Sunflower Rye

The baker's favorite bread. Its tender crumb goes great with just about anything.  It is made with about 30% rye flour so that the rye flavor is not overwhelming and there are sunflower seeds scattered throughout the bread to add a bit of crunch. Naturally-leavened and fermented.

Ingredients: Unbleached wheat flour, well water, whole rye flour, sourdough starter (flour, water, & live culture), sunflower seeds, salt, and butter.

Nebraska 9-Grain


A hearty start to a great day. This delicious blend of 9 grains is soaked for optimum nutrient density. Packed with B-vitamins and lots of fiber this bread is the perfect compliment to a healthier you. Naturally-leavened and fermented. 

Ingredients: Whole wheat flour, well water, unbleached wheat flour, 
sourdough starter (flour, water, & live culture), 9-grain mix (hard red wheat, hard white wheat, barley, rye, oats, corn, millet, buckwheat, & flax seed), honey, salt, sesame seed, and pumpkin seed.

Onion Dill


Filled with a tasty blend of chopped onion and flavorful dill weed and seed in moist, delicious bread. Delicious toasted and served with a creamy tomato soup. Naturally-leavened and fermented.

Ingredients: Unbleached wheat flour, well water, sourdough starter (flour, water, & live culture), salt, dehydrated white onions, dill seed, and dill weed.

 
Pain au Levain


Our traditional French sourdough.  Great for sandwiches, French toast, toast and jam, croutons, or dipping in soups.  Naturally-leavened and fermented.

Ingredients: Unbleached wheat flour, well water, sourdough starter (flour, water, & live culture) and salt.



Peasant Bread

Similar to our traditional French sourdough, but with added whole wheat flour.  It is also prepared in the traditional boule shape.  Great for sandwiches, French toast, toast and jam, croutons, or dipping in soups.  Naturally-leavened and fermented.

Ingredients: Unbleached wheat flour, well water, sourdough starter (flour, water, & live culture), whole wheat flour, and salt.

Prairie Sunrise


Soaked cracked wheat berries, dried cranberries and orange zest are the perfect way to start your day. A hearty bread that will help you feel full and energized all day, this bread just needs a light toasting with butter. Naturally-leavened and fermented.

Ingredients: Unbleached wheat flour, well water, cracked hard red wheat, sourdough starter (flour, water, & live culture), dried sweetened cranberries (cranberries and sugar), candied orange zest (orange peel, sugar, and water), and salt.



Raisin Walnut

A delightful bread with purple swirls of crunchy walnuts and moist, tender raisins.  A fairly tight crumb makes this a perfect sandwich bread.  No added sugar and naturally-leavened and fermented.

Ingredients: Unbleached wheat flour, well water, sourdough starter (flour, water, & live culture), whole wheat flour, dry roasted English walnuts, raisins, and salt.


Roasted Hazelnut & Prune

A favorite "sweet" bread among our customers.  Made with lots of oven-roasted hazelnuts and chopped prunes.  Great for breakfast and makes a phenomenal French toast.  Contains butter.  Naturally-leavened and fermented.

Ingredients: Unbleached wheat flour, well water, whole wheat flour, sourdough starter (flour, water, & live culture), dry roasted hazelnuts, prunes, and salt.

Vollkornbrot

This bread is 100% rye with no added wheat flour.  It is dense, chewy, and delicious.  Requested by many devoted customers who claim it tastes like traditional Russian black bread.  Keeps well.  Naturally-leavened and fermented.

Ingredients: Whole rye chops, whole rye meal, well water, sunflower seeds, sourdough starter (wheat flour, water, & live culture), salt, and yeast.


Whole Wheat Levain

Similar to Pain au Levain, but made with 50% whole wheat flour. Perfect all by itself, with butter, and/or dipping in your favorite soup. Naturally-leavened and fermented.

Ingredients: Whole wheat flour, unbleached wheat flour, well water, sourdough starter (flour, water, & live culture), and salt.
